Multicenter, single-blind, placebo-controlled randomized trial across five sites (Oviedo, Spain; Berlin, Germany; Patras, Ioannina, and Attikon, Greece). Participants include five populations: (1) healthy adults, both sexes, 20–65 years, BMI 20–28 kg/m2, stable weight, able to use a smartphone and have Internet; (2) normal-weight children, 6–11 years, both sexes, BMI between the 5th and 85th percentile; (3) children with obesity, 6–11 years, BMI ≥95th percentile; (4) children with gluten-related disorders, 6–11 years, diagnosed with coeliac disease or wheat allergy on an elimination diet; (5) children with cow’s milk allergy, 6–11 years, IgE-mediated milk allergy on an elimination diet. Exclusions include chronic GI disorders, coeliac disease, diabetes or other metabolic diseases; pregnancy or lactation; recent anti-inflammatory drug use; medically prescribed diets; recent antibiotic use; antioxidant, pre- or probiotic supplements (<1 month); intense physical activity (>10 h/week); and high alcohol intake.
